Bite of the Season: Easy Grilled Citrus Herb Chicken Skewers

Looking for something simple to serve at your next outdoor gathering? These grilled chicken skewers are quick to prep, easy to cook, and perfect for feeding a crowd – no fuss, just great flavor. 

What You’ll Need: 

  • 2 lbs chicken breast, cut into chunks 
  • ¼ cup olive oil 
  • Juice of 2 lemons 
  • 3 cloves garlic, minced 
  • 1 tbsp fresh rosemary (or 1 tsp dried) 
  • 1 tbsp fresh thyme (or 1 tsp dried) 
  • Salt and pepper to taste 
  • Skewers (wood or metal) 

How to Make It: 

  1. In a bowl, whisk together olive oil, lemon juice, garlic, and herbs. 
  2. Add chicken and toss to coat. Marinate for at least 30 minutes (or up to a few hours for more flavor). 
  3. Thread chicken onto skewers. 
  4. Grill over medium-high heat for 10–12 minutes, turning occasionally, until fully cooked. 

Serve with grilled veggies or a simple side salad, and you’ve got an easy, crowd-pleasing meal that keeps you outside and part of the conversation.
