What You’ll Need:
- 2 lbs chicken breast, cut into chunks
- ¼ cup olive oil
- Juice of 2 lemons
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary (or 1 tsp dried)
- 1 tbsp fresh thyme (or 1 tsp dried)
- Salt and pepper to taste
- Skewers (wood or metal)
How to Make It:
- In a bowl, whisk together olive oil, lemon juice, garlic, and herbs.
- Add chicken and toss to coat. Marinate for at least 30 minutes (or up to a few hours for more flavor).
